Title: What do you like in your salad?
Post by: SpAmRaY on Mon, 12 January 2015, 12:11:25
I realized salad isn't so bad if you put enough stuff in it.

So today's lunch salad started out as an organic freerange ready made mix of baby kale, spinach, chard and beet tops which I chopped up to make it easier to eat at my desk.

I added in some sliced smoked turkey breast, bacon, krazy salt , black and white pepper, mustard powder, tumeric, cayenne pepper, diced sharp cheddar cheese, some diced fresh garlic, chopped green onion, soft boiled eggs and my current favorite salad dressing sriracha sauce.

I really like adding fruit to salads. My favorites are pear, tangerine, and dried cranberries.

my goal is to get my soft boiling time down to where they yolk is still slightly runny but so far i keep having solid but very creamy yolks but they taste much better than the 'green' yolks  most people associate with boiled eggs

cheese and many light-coloured, thin dressings. meats are also nice.

make a salad a meal, not a side, I like to say

EDIT: by many I mean most, not a lot of them

Spinach, sunflower seeds, a small amount of protein (turkey, tuna, chicken, ham, or steak) and whatever dressing or infused oil I can find. I really like simple salads.

I like yuppie greens(anybody else use this term?) with walnuts or pinenuts, dried cranberries or pomegranite, and either oil+balsamic or bleu cheese.
Chickpeas beets and jicama are good too.

I generally steer clear of cheese and red meats in salad, because that entirely defeats the purpose of eating a salad.

my goal is to get my soft boiling time down to where they yolk is still slightly runny but so far i keep having solid but very creamy yolks but they taste much better than the 'green' yolks  most people associate with boiled eggs

Boil for 6 minutes on the dot, and put them directly into an ice bath = perfect runny yolk every time. Soak in a zip-loc baggie of soy sauce and tea (50/50) overnight for maximum yummyness.

Get water boiling, drop eggs in, boil for 5 minutes, rinse in cold water and shell immediately. Mine come out perfect every time. (This time is for large eggs. For medium eggs, cut time by 30 seconds)

Rainbow chard, whatever lettuce they have that isn't iceberg, kale, maybe some radishes or carrots if they're cheap, grab a random green

usually turns out ok since i put way too much dressing on a lot of the time since it makes it look prettier

bún bò xào
vietnamese noodle salad...
you can make many varieties of it, but I like the one with grilled pork shoulder slices, or grilled shrimp.

I don't have any coleslaw... I'll go buy some tonight and make this...

Which ramen r u using..

Here is the recipe my wife found it on facebook

Quote
Oriental Ramen Broccoli Cole Slaw

2 (3 ounce) packages beef-flavor ramen noodles (we used the $0.30 maruchan packs)

2 (8 1/2 ounce) packages broccoli coleslaw mix (I just got 2 heads of brocollis and a bag of coal slaw)

1 cup toasted slivered almonds (we used regular slivered almonds not toasted)

1 cup sunflower seed (we couldn't find sunflower seeds so we got a sunflower and roasted pumkin seed mix)

1/2 bunch green onion, chopped

1/2 cup sugar

3/4 cup oil (we used extra virgin olive oil, perhaps a little sesame oil might be good but probably just a little as it can be overpowering)

1/3 cup white vinegar

I also added bacon bits, shredded cheese, sweet and sour sauce and sriracha sauce in my personal bowl.

Directions:

1Before opening noodles, crush into small pieces. Open packages and set aside flavor packets.

2 Place noodles in bottom of large serving bowl. Top noodles with broccoli slaw, then sprinkle with almonds and sunflower kernels, and green onions.

3 In a separate bowl combine sugar, oil, vinegar, and flavor packets from noodles. Pour over slaw, cover and chill up to 24 hours.

4 Toss before serving.

This makes a large batch so if fixing for one you might want to half or quarter the recipe (there were 4 of us and I had more than enough for lunch the next day and I threw some out since nobody else wanted any).

It can be filling but it also can be laboreous to eat if the ramen hasn't soaked up enough juices and is still hard. Also it seemed really oily so perhaps take that into consideration if you don't like oily foods.

Mom makes spinach, kale and such.

Usually I'll put some dried cranberries, feta cheese, and either ginger dressing or balsamic.
If she made some chicken or anything I can toss in there, I'll put in to make it less leafy tasting. Ooh, also some ground beef with cooked onions... Now I'm hungry... Thanks.

I don't like salad.

Greens generally prefer cool weather. They tend to get bitter in summer heat. Choose carefully and you might find that you like some greens but not others.

I like spinach.. but I don't like how you gotta brush your teeth after eating it.... such a hassle..

otherwise, you get that astringent-feel, similar to unripe bananas..
