I was wondering which one of the provided options on unicomp website is the classical one, grey mods and pearl others http://www.pckeyboard.com/page/Buttons/KSET

Not sure what you mean by classical?
Standard IBM colors are pearl / pebble, and in a 101 key layout. Note that you will have to also order the spacebar as well, you will want the 'large' size (7x width).
Unicomp also has keys available in black, grey or white (plus a myriad of other colors) in 104 (old style), 104 (new style), 103 and 105 key layouts.
101 and 103 use the large spacebar, both 104s use the small spacebar.

You want the pearl and pebble. And if it's for a genuine IBM board, order the large pearl spacebar to go with it.
