What's the most expensive part of a keyboard?
Break it down if you have to. In terms of unit cost, r&d and tooling?

Depends a lot on the parts you choose, but I'd say
CASE>PLATE>Keycaps>Switches>PCB

Yeah totalling up the parts on both my customs and the case is about 50% of the price on both. For stock boards I'm really not sure but I can't imagine R&D for a PCB would be cheap.

Assembly. Even on mass-produced keyboards some of it is done manually.

My vote is for rarity. But I'm a sucker for vintage keyboards.
