Title: Help on purchasing the correct diodes.

I have an old Apple M0110[5] that I have desoldered in preparation for a point to point rebuild, inspired by Yoe[1] and LowPoly[2].
Both of these builds use Alps switches and 1N4148 diodes, see [3] and [4].

If I was going to use Cherry MX switches, would I use the same diodes or do I need to get faster ones?

Those diodes are fine. They don't vary by "speed" rather than vary according to voltage / current /power rating. For the purpose of a keyboard, just about any 1N4148 diode will be fine, though you probably don't want SMD
