So based on my research for the last week, it is safe to assume that all topre blank colored keyaps have effectively disappeared from the planet, however i still need me a blank set...
I do have a printed blue set though and what im highly considering erasing the legends from them to make my own blank set. I haven't done anything like this previously though so if anyone has any experience or knowledge please share with me :)
I believe all topre keycaps are PBT as opposed to ABS so the removal processes should be more forgiving on the keycap I think... but i don't know how are the legends printed on though.

Not possible. They make legends with dyesublimation, which injects the ink into the plastic. Think of it much like a tattoo... not really so simple to remove. If you're set on blanking it out, the only simple way is to 'go over' it, as in dyeing all the entire keycaps black so the legends become 'invisible'.

What about sandpaper? Does that get rid of the layer with the legend without too much noticeable damage?

You will need to sand out nearly half if the top part of the caps to remove the ink completely. It is possible, but this will change the texture, size... even the profile will change as well
