Im looking to dress up my HHKB a bit more but I have not seen any more options aside from the PFU manufactured white and black / lettered / non-lettered sets.
Is there more options than those?
I dont think realforce sets would work either right because the right shift is not the same size, as well as the Fn key to the right of it?
What are my options?
I already own one white and one black full set each.

There are Topre to MX sliders being introduced lately as a part of this group buy https://geekhack.org/index.php?topic=71630.0, which will be available on their own in the future.
This will make all existing Cherry MX sets compatible with HHKBs, provided they have right layouts available.

There are only black and white sets as released by PFU specifically designed for the HHKB.
RealForce sets can be encouraged to fit with a little imagination and tolerance of incorrect legends.
Apart from that, as nmur observed, the Topre to MX sliders allow many MX keycap sets to fit.

Regarding Topre to MX sliders tho... how does that work with type-s hhkb? can the silencing foam or w/e they use be transferred over to the new mx slider and the silencing will not be lost? I can't imagine it going that well and easy. Also I remember somewhere saying topre to mx sliders are shorter than hhkb sliders so wouldn't that change the typing experiences as well :/

Silencing can be transferred just fine.
The type s sliders have a thinner base which compensates for the thickness of the silencing material over the sliders. That is why people think the type s sliders are taller.
The topre to MX sliders would be effectively the same as normal sliders but slightly different to type s.
I have no idea if using normal sliders with the silencing material will actually affect the typing experience.
