Title: What's the difference between the 2923, 3923, 5923, 6923, 7923, 8923 keyboards?

Vintage rubber dome keyboards.

Is the higher the number the better quality, or are these likely using the same parts?

Those sound like Chicony numbers in which case nothing makes sense.

Numbers usually just relate to series and layout/design.

So it's not like A/V equipment where the higher up in the range of performance & build quality?

Buy a Topre keyboard.  Much nicer rubber domes than vintage.
