Steaming and microwaving preserve more nutrients. You probably lose something any time you don't eat fresh and raw.

Some nutrients are leeched into the water, and/or others are chemically changed and degraded by the heat.

On the other hand, many common modern foods (grains and beans for example) are inedible in their natural state.

Just lean over the boiling pot with a towel draped over your head then you can just breath in the vitamins and minerals as they cook off.

I'm sure this works as I saw it in crocodile dundee.

Studies show, if you don't drink the water,  you could be missing 30-40% of certain water soluable vitamins from your veggies..

BUT.... if you drink that water..  you're g2g..

That's a choice mr. tp. I'm a grown up, but I still play games 2-3 (sometimes 4) times a week. Being a grown up doesn't mean you have to quit playing vidya

I try to simmer down a bit, so that I don't have too much liquid volume, so i could eat more stuff with the veggies.

Who is "they" and why does it matter what they say?

Do you think the nutrients lost from boiling vs steaming vs frying vegetables is substantial enough to make a marked difference in your health? Cook veggies how you prefer to eat them. As long as you are eating the recommended serving per day I'd say you're doing great.  :thumb:

I ain't drinkin carrot water mang.

You can boil veggies in water sometimes.
The restaurant I work at goes through so much broccoli that we have to boil it.
It still tastes fine. The only issue is that any longer than 2 minutes will kill the broccoli.
The broccoli also has to be cooled or it will continue to cook. Though at home you'll just use the food right away so it's perfectly fine as is.
In order to cool it you have to bathe it in ice water; normal water will kill the broccoli.

You only lose the nutrients if you over cook them... If your water turns green when you're cooking broccoli, you have done it too long.

Why not just steam it? They retain most of their crispness and cook as if boiled, all without absorbing absurd amounts of water and leaking nutrients.
Honestly, who boils their veggies anymore, this is the 21st century.

People who don't have counter space/money for a steamer. Or who just find it easier to throw veg in a pan with water.

Speed is a big issue.. steaming takes a long time vs just boiling/ blanching

U know.. I'm not actually sure if that's equivalent..  I personally think it probably works ok..  but the internet says synthetic vitamins don't work the same as real vitamins.

Or you can just have this in the very same pan with water underneath, take no extra space and cost very cheap and you end up with a steam pan

Yup. No excuse not to steam. Inlay steamers are like $2-3 and most pots come with one anyway.

Not true. Eating them raw is by far the healthiest way to consume vegetables.

That's absolutely true! But I do think spending some time with things you eat is good for you. Keeps body and soul together. So I would say a boiled carrot with some other things - not all boiled to death - and cooked with love is better than the raw carrot in the subway running to a date.

I wouldn’t recommend raw potatoes, cassava, taro, etc., beans, eggplants, many types of squash, some tougher sorts of leafy greens. People with thyroid problems should cook veggies like broccoli and cabbage.

More generally, cooked vegetables are fine. In many cases cooking increases bioavailability of certain nutrients.

Of course. Baking them seems fine too is you're not into raw stuffs.

Juicing is totally great, especially if the pulp is included. Even if you don't like the taste, swallow fast and brush your teeth.

Yup. She bought a juicer and I think it was well worth it.
She knows I only like Apple/Orange (good combination btw) ;D but fruit itself is high in sugar content, so she adds a few small stalks of veg when she juices for me. :D
