I made veggies soup, brocolli, cauliflower, carrots, potatoes,... season the stock and eat everything then. Win.
You can boil veggies in water sometimes.
The restaurant I work at goes through so much broccoli that we have to boil it.
It still tastes fine. The only issue is that any longer than 2 minutes will kill the broccoli.
The broccoli also has to be cooled or it will continue to cook. Though at home you'll just use the food right away so it's perfectly fine as is.
In order to cool it you have to bathe it in ice water; normal water will kill the broccoli.

I try to simmer down a bit, so that I don't have too much liquid volume, so i could eat more stuff with the veggies.
Why not just steam it? They retain most of their crispness and cook as if boiled, all without absorbing absurd amounts of water and leaking nutrients.People who don't have counter space/money for a steamer. Or who just find it easier to throw veg in a pan with water.

I actually do this. I use it to make shakes no joke..... :-X just some fruit and that water problem solved

I blend the fruits with boiled water(cooled down obviously). Hispanics do weird **** I am part of that.

Not true. Eating them raw is by far the healthiest way to consume vegetables.
This is why you fry them.i only like fried asparagus tbh
I wouldn’t recommend raw potatoes, cassava, taro, etc., beans, eggplants, many types of squash, some tougher sorts of leafy greens. People with thyroid problems should cook veggies like broccoli and cabbage.
More generally, cooked vegetables are fine. In many cases cooking increases bioavailability of certain nutrients.

Juicing is totally great, especially if the pulp is included. Even if you don't like the taste, swallow fast and brush your teeth.
