Can you simply pop the switch tops off of Cherry Blacks and install tops of Cherry browns or is this a soldering gun mod?

Yes.
The method in which you do it would depend on the switch mounting. Plate-mounted 'boards (Filco, Das III, etc.) require soldering. PCB-mounted 'boards (Cherry Corp.) can be swapped without soldering; you just pop the top.

I would imagine that soldering would prove much quicker if you were doing a full board swap.

The pics don't show it but there is metal plate mounting. Looking at a modded one it doesn't look like you can remove the cap without desoldering from the board.

You can see if you look between the keys, that a Scorpius M10 is actually plate-mounted. Just looking at the back of the PCB isn't going to show you much.

Like crap. I did a switch swap on the spacebar of one of my 'boards (putting a grey spring in a brown switch). The brown with the grey spring lost almost any tactility it had. It pretty much feels like a black.
