If we're talking current keyboards:

Unicomp (buckling springs)
KUL
Topre (topre)
PFU (hhkb)
Leopold
Noppoo
Keycool
Royal Kludge
There's more I don't remember off the top of my head.

Active manufacturers: Rapoo, Nappoo
Non-active manufacturers: IBM, Univac/Unisys, DEC, Amdahl... basically any big computer firm made their own keyboards.
Early computers didn't have industry standards (apart from IBM's 80-column card) as far as I know, so each computer could only use the keyboard it shipped with or some very similar models from the same manufacturer.
If you plug this:

into this:

Both will probably explode in a cloud of expensive fireworks.
Incidentally, the bank of switches on the control panel to the lady's right is actually the "keyboard" of the IBM 709. You use it to input a 32-bit binary word into a selected memory address, which probably means it has the most direct input method ever, directly editing a memory location. I wonder if that is considered "mechanical" enough... :D

man that univac board looks like it would be fun to use

Do manufacturers with only one model count? If so, then ErgoDox EZ and keyboardio.
There's also Kinesis Corporation, and Maltron, both with some variety of models.

Ultimate Hacking Keyboard, Truly Ergonomic Keyboard, Type Heaven, Vortex, Realforce, Redragon, Rosewill, Adesso.

Deck and Logitech

Now that the Cherry patent expired, there are literally hundreds of independent manufacturers vying to get into the scene so the field of manufacturers has changed massively, even from just last year. Just search Taobao and you'll see mechanical keyboards from companies you've never heard of like Lingyi, GANSS, or WolfBlaze.

The Realforce and TypeHeaven are actually just names for Topres own keyboards.
-
Yeah, and for example Das is actually a product line of Metadot, and the products themselves have been made by various manufacturers (Key Tronic, Cherry Corp., Costar, another one or two OEMs).

Varmilo makes keyboards, and they have a forum on here: https://geekhack.org/index.php?board=192.0

ITT people confusing brands and manufacturers.
This. Most of the brands posted here only order, design or rebrand stuff.
Costar, iOne, SolidYear, Togran, TG3, Datacomp, i-Rocks, ZHH are a few examples of actual manufacturers.
