I've seen a vendor who sells keycaps with transparent tops, which can be opened to place your own piece of paper or whatever and so easily customize your keycaps. Are they any worth?

They're called relegendable caps.
Worth is subjective to a persons needs I suppose.
Personally I wouldn't want to type on them regularly. But for extra function keys they might have a place.

They are called relegendables. I use them on a numpad/macropad (https://geekhack.org/index.php?topic=85874.0) and they are handy, but their flat surface and their profile homogeneity don't make them suitable for typing, in my opinion.
