Title: keyboard cables with heatshrink

I was wondering how well the heat shrink holds up over time on keyboard cable if you unplug and re-plug them in a couple times a week

No problems with the heatshrink. One of my boards I'd disconnect every day because the back lighting would stay on. Heatshrink still looks fine.

No need. You really shouldn't be worried about the heat shrink.

I think the future is those magnetic cables, so you don't ruin the jack.
