I'm making a split keyboard with 4x4 on each side. I think it's too trivial for i2C/Serial if there is a cheap and accessible cable out there with 8 pins. Anyone have recommendations?

Is there a size restriction for the connector? Plain old Ethernet cables/plugs are 8 pin but the plugs/receptacles are a bit bulky.

RJ45? Good suggestion.
Regarding size, I would prefer as small a connector as possible -- I was considering USB-C since it has more than enough ports (enough to implement reversibility as well, if that isn't too hard).

You could use a 8-Pin PCI-E Power Cable ;)
I would recommend DIN connectors. Should at least be visually pleasing, if you find on, you like Shamelessly inserted Google image search result (https://www.google.com/imgres?imgurl=https%3A%2F%2Fcdn3.bigcommerce.com%2Fs-m93uogf%2Fproducts%2F111%2Fimages%2F1082%2FAISG_RET_Connector_Female__39141.1445459854.1280.1280.jpg%3Fc%3D2&imgrefurl=https%3A%2F%2Fwww.txmstore.com%2Ftxm-aisg-f8-d-aisg-female-8-pin-din-connector%2F&docid=ZZ9AW8TiEULxZM&tbnid=onAxwhq6o8AryM%3A&vet=10ahUKEwiVk_3jkrDdAhWsyYUKHQ4ACxAQMwimASgDMAM..i&w=1000&h=773&client=firefox-b-ab&bih=1006&biw=1858&q=din%20connector&ved=0ahUKEwiVk_3jkrDdAhWsyYUKHQ4ACxAQMwimASgDMAM&iact=mrc&uact=8)
