I'm typing this from a Mac-layout Matias Mini Tactile Pro within Windows, since Matias no longer makes clicky boards for any other platform. I have routinely used Windows-oriented keyboards whenever I need to use MacOS/OSX in years past. The drivers necessary for most boards will almost always install and function automatically across operating systems, including Linux. The only difficulty of notice (that I'm aware of) you may encounter is that Apple, in their infinite wisdom, swapped the command/Windows keys with the option/alt keys.
I imagine you could map these however you like with QMK. I have no experience with that firmware. This keyboard is not programmable at all, and neither are the vast majority of my other boards, so I just work around the minor differences. It does sound like Matias may actually end up sending me a Windows-specific quiet pro that was returned with issues unrelated to the controller though, and the controller in this board is removable, so I should be able to have my cake and eat it too soon.
