Wouldn't it be more representative, if all switches had keycaps? Because keycaps amplify the sound, and nobody uses bare switches anyway (I guess). Even though the case and exact keycap type alter sound further.

No, because the difference in keycap and the impact on sound is huge, and they distort the sound of the clicker which is what the video is about.
