I guess I just have to change led to red and whatnot seems fine?
The LEDs on the bottom are RGB. The color can be picked using the bootmapperclient you download. If you're talking about the in-switch LEDs, you can specify them to be red through the drop down menu.
Also I am a complete noob at these things, is it possible to get the keycaps in these pictures the same but in red instead of pink on the spacebar/korean lettering as well?
The keycaps I don't know about specifically but if they were part of a group buy or limited run, chances are unlikely you'll be able to get them; soon if at all unless someone is willing to sell you their set. Usually something specific like that aren't available "off the shelf"
Last question I have is if I buy all this stuff most of it is supposed to come pre-assembled right? How much manual work will I have to do to get things working because I have 0 idea on how to solder or do anything of the like, I was under the impression most of it is pre-assembled as I would select that option.
The soldering services that Houjin typically offers is for the advanced soldering of the little SMD components such as the controler, diode, resistor and RGB LEDs. You would still need to do the (much easier) through hole soldering of the switches and the in-switch LEDs usually.
However, from the email he sent you, it seems like he's willing to do that soldering for you as well so when it arrives, it will be completely assembled and all you'd need to do is find keycaps.
If you agree, he'll send you an updated invoice which includes all the soldering fees and parts needed for a complete ready-to-go keyboard.
The choice becomes whether or not you want to learn to solder. If you don't, then go with the additional services he's providing. If you do, there are many
how-to's on youtube that will get you going.
