Any suggestions on how to minimize the click-clack at the office; the board sits on a keyboard tray (metal) and if I can hear it through headphones I know my peers can; besides that it annoys me - seems the spacebar is clackier with a different tone/sound.
I like it but wish I'd held out for the Topre.

One thing I've noticed with us (mechanical keyboard users) is that we tend to be more concerned about disturbing others with our keyboard noise than if others are actually bothered. I used to think that my Dell AT101W with black ALPS was loud. Then one day, someone needed to use my computer for a few minutes. I went on the other side of my cubicle wall to listen to the noise level. It was actually pleasing to the ear and not as loud as I thought.
Lately, I've started to use my G80-3000 with blue Cherry at work. I asked my immediate cubicle neighbours who said that it did not bother them. They only notice it in the morning when I just arrived, but don't as time goes by.
Blue Cherry is louder than brown Cherry. But, the Filco has a metal plate which, as you said, can produce a clac sound. That said, the brown Cherry does not need a lot of force to fire. Try using a very light touch when typing. A touch-and-go typing style. Once, you have developed such a style, the brown Cherry Filco will be a great keyboard to type on. I'm currently using one to type this message. Sliding a microfibre cloth under the keyboard can also help.
