Acrylic is also known as PMMA or as the brand name "Plexiglass". You could get acrylic from most vendors that sell glass, although not all vendors offer it in higher thicknesses.
Other than that, keyboard cases could be built from just about any material imaginable. They are just cases.
I have yet to see interlocking parts of laser-cut plywood. Layered plywood for sure, but not interlocking (horisontal and vertical parts).
Myself, I have mostly rebuilt plastic cases from older keyboards to fit.
