Mexican food isn't massive here so I have to ask, what's the mythical 'soft' taco? Every time I've had tacos you take a bite and half the shell cracks open depositing anything not already in your mouth flat on the plate below, leaving a mostly empty shell in your hand

Soft tacos are with regular soft corn tortillas. Which is what they all eat in Mexico.

The hard shell is an American thing.

So it's like a fajita and burrito type thing?

Ugh. No. Those are flautas. You don't fold the tortilla all the way. You just dump the ingredients in the middle and fold the tortilla in half.

If you fry them.

If you fold one half of the taco over the other, that's fine. I've never seen regular tacos wrapped like a burrito, though. And burritos served in Mexican restaurants (in America) are massive, so they have to wrapped entirely.

It is also important to note that the second tortilla per taco is usually only associated with corn tortillas, and not flour.

TIL all mexian food is wrapped

We love our tortillas; they can be used in almost anything. Got a dish that didn't come with tortillas? Get some tortillas on the side and make some tacos. Need to scoop up the remains of your meal and the fork just doesn't work? Rip pieces off the tortilla and pinch the leftover food, and watch as the tortilla even absorbs any sauces.
Got some soup? Maybe it's too hot? No problem. Get a tortilla, roll it up, and dip it in so the tortilla absorbs the flavor. Keep stuffing your face with soup-absorbed tortillas until the soup is cool enough to eat.

The only meal I can think of that doesn't use tortillas is a shrimp/seafood cocktail, though I don't think that's traditionally Mexican.

I've never seen a burrito bowl at Mexican restaurants, but that may have changed. At Chipotle, however, I always get a bowl because you usually get more than in just the flour tortilla.
