Grass fed lamb, cooked slowly from about to 4 hours, or more, seasoned with garlic and rosemary, cooked with local wood  :eek:

My wife is from north east Mexico, Monterrey. They do the same thing with baby goat. It is called cabrito and is easily my favorite meal there. They have different cuts, front shoulder, rear, ribs and the head. My wife and mother in law love the latter and eat the brains and eye balls, of course, on tortillas.

Around here all gathering and celebrations with family and whatnot revolves around meat. It's not a real festivity if no meat is around :)

Well.. My conscience is clear, chicken is the lowest cost protein I could find.. and it is my primary protein source..   If I could buy a vegetarian protein source that's cheaper than chicken, I'd be all over that.

I love the taste of lamb. I think its better than beef, but I stay away from it for the same reason I won't eat veal (baby animals).

I eat a lot of chicken, too, with some pork here and there. But vegetable sources of protein are often cheaper: take a legume and add grain and you have a good source of protein. Rice and beans, bread and lentils, pasta and chickpeas, etc.

The other 'trick' to getting veggie meals right is to supply a source of vitamin B. Regular yeast bread has it, quickbreads and pita don't.

See, I adore veal and lamb but I am so disassociated from my distinction of living animals and the ones I eat that my brain sort of puts up a mental block as to where my meat came from. If it makes any difference, I think foie gras tastes like cat food but in the end the ducks are still force fed and killed in a harsh manner, so me not eating them isn't going to save any.

On another note - the best meat ever is buffalo. Better taste than standard grade beef, and much much healthier. A very close second is pork, because my word, the pig is just a gloriously tasty animal no matter how you prepare it.

Tofu is ridiculously expensive in the USA :D


Also, whoever suggested beans as substitute doesn't realize that it's nitro-ass-fuel,, good luck with that..

Every friday when I used to live in Tahiti (French Polynesia) my father used to take me out to the "roulotte" where you could eat a fair amount for about 12 dollars. Instead of bread you had rice though.

I'd probably be pescetarian, if I wasn't so nihilistic and lazy. Fish is generally superior to mammal meat as far as protein absorption and amino acid profile is concerned, the only problem is the sustainability issue. Back on the original topic, that lamb certainly looks delicious.

Cute... You know that a veggie meal in a nice restaurant will look 100x more appetizing than that one on the left (and 3x the one on the right, IMO).

As for getting gas from beans, in my experience that only happens when you leave out the protein complement (grain, etc).

you know some of us wacko vegetarians just like... don't like meat. there are plenty of moral reasons but at the end of the day i just really don't like the taste -- but more than that, the texture of most meat is really unpleasant to me. i don't like most fake/imitation meats either.

that said, this looks pretty delicious for meat. i might even try a bite :P

Some beans are worse than others. It is also important that they are cooked right.
Black beans, usually no problem.  I have also never experienced that I have got excess gas from eating tofu or other soy products.
Chickpeas cooked without rinsing are the worst. Canned chickpeas are not always cooked right, and btw, most often also taste horrible.

Fish is generally superior to mammal meat as far as protein absorption and amino acid profile is concerned, the only problem is the sustainability issue.
Don't forget the fatty acids. Omega-3 vs saturated fat.
Also, farmed fish can be fed vegetable feed, so the sustainability issue could be solved if there is a will.

I missed a word. It was native wood. Every tree gives you certain scent in the smoke. The other typical way would be with a gas/propane burner or stock bbq charcoal, but with that way you miss part of the flavor nature intended you to taste  :p. Another way would be in a oven, and etc, etc....
