My wife is from north east Mexico, Monterrey. They do the same thing with baby goat. It is called cabrito and is easily my favorite meal there. They have different cuts, front shoulder, rear, ribs and the head. My wife and mother in law love the latter and eat the brains and eye balls, of course, on tortillas.

Well.. My conscience is clear, chicken is the lowest cost protein I could find.. and it is my primary protein source.. If I could buy a vegetarian protein source that's cheaper than chicken, I'd be all over that.I love the taste of lamb. I think its better than beef, but I stay away from it for the same reason I won't eat veal (baby animals).

I eat a lot of chicken, too, with some pork here and there. But vegetable sources of protein are often cheaper: take a legume and add grain and you have a good source of protein. Rice and beans, bread and lentils, pasta and chickpeas, etc.
The other 'trick' to getting veggie meals right is to supply a source of vitamin B. Regular yeast bread has it, quickbreads and pita don't.

Also, whoever suggested beans as substitute doesn't realize that it's nitro-ass-fuel,, good luck with that..

Fish is generally superior to mammal meat as far as protein absorption and amino acid profile is concerned, the only problem is the sustainability issue.Don't forget the fatty acids. Omega-3 vs saturated fat.

I missed a word. It was native wood. Every tree gives you certain scent in the smoke. The other typical way would be with a gas/propane burner or stock bbq charcoal, but with that way you miss part of the flavor nature intended you to taste :p. Another way would be in a oven, and etc, etc....
