Need help with first custom build

Hi,

Currently using 2 production TKL boards with cherry mx red and browns.  I want to build a 67% board.  I looked through kbdfans and I definitely want to use the tofu 67% case along with a polycarbonate or carbon fiber plate.  The only problem is I don't know which pcb and plate is compatible with the tofu case. I'd appreciate if someone with more experience could help me put together a parts list.

Since I'm new I don't know the differences between hotswap and soldered boards outside of the obvious.  Does one have a better feel than the other?  Is one better/worse than the other?  I don't care for RGB, and I'd prefer to have usb-c.

Are there switches out there that are comparable to the cherry mx reds and browns in feel and weight but are of higher quality?

I understand there are a lot of variables to get a certain sound out of a keyboard.  Given that, what mix of parts would net a not so loud thock sounding keyboard?  Not really into the clack sound, but a deep low sound thock is what I'm going for.

Nothing really beats Alps in terms of sound. As for MX linears, I could recommend Gateron Red Inks. They are a much smoother version of Reds that sound better as well.
