Hey,
I was looking at a lot of keyboards today and I have finally found one that I really like, but its in ISO-UK and doesn't have the extra letters we have in german. Is it possible to "transform" it to ISO-DE

thats the keyboard:

Yes. The computer has no way of knowing what is printed on the keycaps - they can be blank or whatever. Just plug it in and it will work.

K320 was $99 a year ago. Maybe it's coronavirus pricing, or maybe the ISO versions and European markets are just that much more expensive.

If you want K320 that much, i recommend you go look on ebay first. Chances are you will find the same thing without that ridiculous covid tax.

Pretty sure it is marked up from vendors. I remember it was way cheaper even a few months ago

Just a tip:
When you want to tackle something like this, find the keycaps before you order the UK-board. There are many nice options out there - but many will cost you about as much as that keyboard costs and the cheap Chinese ones that come with German lettering mostly are sub-par in terms of quality.
