So I was just wondering if, for example, the Cherry blacks in a keyboard from 1990 are the same as Cherry blacks in a brand new model of a keyboard today, or are they made by different manufacturers, maybe with cheaper versions made in different countries with cheaper parts, etc.

I don't think so. I believe all Cherry switches (except for clones, obviously) are manufactured by Cherry Corp themselves. However, switches from 1990 might be different from switches made today (that was 21 years ago after all).
