You could call them sorts. Except that !, $, &, ( and ) usually came with fonts from the foundry, while other commercial signs and symbols, like @, #, %, and *
were ordered as sorts, and thus you used the same style (looking Bodoni-like) whether you were setting type in Caslon or Garamond or Century Expanded.
