There's a danger if you use two devices with 1000hz polling rate each one?

Doubt it, I currently have two mice plugged in that should both be set to 1000hz, and it's not giving me any issues. The only issue I can think of is that you might not get 1000hz on both mice, but from what I've read you rarely get that anyways.

Also, to those who know more about this than me; is there really any point of having your polling rate higher than your monitors refresh rate? If you have a 120hz monitor will a 1000hz polling rate really be different from 500hz?

Like I said; I don't know if having multiple mice connected will lower the polling rate, but I haven't noticed any issues with two or more mice plugged in. Not sure what would happen if you plugged in two of the same mouse, though. Would depend on software and onboard memory I suppose.
But most gaming mice have their own drivers, so the adjustments you make in the driver for one mouse shouldn't have any impact on a mouse using a different driver. Exception is if the driver directly alters windows sensitivity, that would make a difference on all pointer devices apart from graphical tablets and the likes.
