Anyone know where I can find thin blue PBT caps?

It looks like you might be able to get a BCT set from SP

I think they have everything except a spacebar and the 2x '0' key on a numpad.

IMSTO is a vendor here, located in China.  He's made many thick PBT group buys possible, as he's connected to a factory that produces and does dye sub legends on keycap sets:

A little bit OT, but are you suggesting that you can (affordably?) buy singles of anything on that pdf you linked to, from SP? I had no idea... that might make it easier to fill out a set for an oddball ergo keyboard...

Yes, you can order singles from that list.  I'd check with SP before placing your order that the caps you want are still in stock, as the list is only updated once a month or so.
