Hi Geekhackers.

I'm a novice geek at best, but revving up to install a full ergonomic gaming/design office for my tall self, and I'll need some expert input to get it right!

How tall, exactly?  You'll need to be pretty far above the average height to be called tall around here :p

Any idea what type of keyboard you'd like to get?  And have you considered a standing desk?  They are quite popular for many people.
