How does this work? Can we just put a poker 2 without case into this "case", or do I have to build a keyboard around the case by sourcing my own PCB?

yep, you could just stick your poker pcb into this. You would obviously need to desolder and resolder the switches into the plate though.

That's awesome!  I've heard people advertising HHKB style and still have holes on the bottom for Ctrl keys... so I just wanted to make sure.

Since you're only remove the 2 keys on the sides of the bottom row any 60% keyboard should do, check GON pcb or Winkeyless for exemple.

I think you could probably use just about any Korean 60% PCB that supports different ANSI formats and key layouts. GON need 60 would be good probably.
