Saw a previous thread about cooking ... I LOVE to cook and have lately been cooking up a storm.  Lots of buddies tell me that I need to make a cookbook and sell it ... for now just some pictures ...

First up ... Chicken breast, pan roasted Fuji apples and Stilton cheese.

I trained as a chef for 2 years have been doing it as job since I left school. I am now getting a BSc in Computing and Technology because I am sick of the hours of being a chef.

I shied away because of the competition ... here in Canada it's pretty fierce if you want to be near the top of the heap and actually get to do some of your own creations (I imagine it's like that everywhere) ... I had no desire ending up as a line cook at some chain restaurant -- which is what happened to most of the grads of the program that I talked to.

ATM I am unemployed but my last 3 jobs I have had full control. Only lost my job because the place I was at shut down due to flooding. I have a good reputation down here but no one is hiring atm.

That's not a problem here in Canada.  My butcher is awesome too, perfectly aged beef all the time.  My step-father was a butcher so I learned the difference young and am incredibly fussy when it comes to beef!

On today's menu is Teriyaki chicken stir fry with sweet onions, red, yellow and orange peppers (and baked potatoes which are not pictured).  And of course we have Bugsy the Pug as the inspector/guard making sure things were done right and that no one could steel the food while we weren't looking.

A new favourite side/snack ... baked cauliflower.  Toss in a bit of grapdeseed oil an salt and pepper and bake for 20-25 minutes.  Very yummy.

And something I made the other night ... one of those "what do I have in the fridge and cupboards" kind of meals before grocery day :)  White pacific shrimp, home made tomato, roasted garlic, onion and white wine sauce, and a spanish style fritatta (eggs, potatoes, onions, cheese).
