Pray-tell, what ARE considered good knives? I'll come out and say that I have a not-even-remotely-cheap set of Henckels, and they are the sharpest things I have ever used, ever. They also seem fairly well constructed. However, I didn't pay for them, I just picked them out (wedding registry gift), so Im curious as to what are considered the topre of kitchen knives.
Probably the best Knife equivalent of a Topre in my mind would be a
Nenox It is a premium knife at a premium price.
You can get equivalent or even better knives for cheaper, but you have to know where to look and, be willing to be patient sometimes.
