You should have held that steak on the fat to give it a bit colour.

Buffalo > Venison. Also, potatoes are disgusting, no taste and all the texture of cardboard moistened with baby spit. Gnocchi and french fries are good though.

You do know that French Fries are potatoes?:)
I baked my potatoes. Then scooped out the meat of the potato. Added sourcream, green onions, sauteed bacon end pieces, salt and pepper to taste. Refilled the skins and reheated in the oven.

Potatoes are my favorite food, I eat them a lot. I dont normally boast about potatoes but I do know I get them more than the average person.

Quite the contrary in my area, girlfriend's family speaks Spanish and there is a half decent population. 'Specially horse farmers and assorted farm hands. I wish I could speak a lick of Spanish to help, but alas...I hate speaking Spanish. Anywho, I prefer my steak medium rare chop steak with sauteed mushrooms, onions, peppers, and butter and sliced crispy baked potatoes (kinda like Au Gratin, but baked into a chip)

You know, I understand why the bone makes the steak better, but it's the reason I don't eat T-Bones at all and why I avoid bone-in ribeye.  The taste is almost always spectacular, but I paid extra for something I can't eat and is usually a deterrent to finishing a meal (I'm a little crazy when it comes to cowflesh, if I can see it, I want to eat it even if it's in the tiniest of crevices that my fork, knife or mouth can't reach. )

 - Asparagus. But I usually end up with a baked potato (butter, sour cream). Fresh bread. Cabernet Sauvignon or Shiner Bock.

Cook it yourself or go to a restaurant?
- Restaurant. I can't buy USDA Prime beef in my area grocery stores.

Seasoning used?
 - Salt and black pepper. While it is resting, it can have butter melting over it. I never use traditional steak sauce, but a nice bearnaise tastes good, I must admit.

 - Sous-vide for 2hours@128f and then either seared on cast iron or with a torch
 - Smoked (tough to do rare though,  typically medium-rare)

How well done do you like it?
 - Rare

Favorite side dish to go with it?
 - Broccoli with garlic
 - Scalloped or gratin potatoes

Cook it yourself or go to a restaurant?
 - I almost NEVER order steaks out.  So overpriced.

Seasoning used?
 - Salt and pepper
 - Montreal steak spice, when it's a mediocre steak

So what did you end up making, Beast?

I have my favorite style in my first post. But last night I cooked a marbled new york stripe (medium rare for me, medium for mom), pan fried in olive oil with mushrooms, baked potato for her and friench fries for me ^___^

I think she was just happy that she didn't have to cook

Large T-Bone, medium-rare (more on the medium side though), straight salt and pepper, served with fries. Made at home of course, cheaper and less of a chance of getting a badly cooked steak (though I don't really have any real steakhouses where I'm from).

I recommend eating at a Ruth's Chris's Steakhouse, and a Del Frisco's at least once.  Other local steakhouses around the nation can be better, for sure.  Donovan's in La Jolla has an excellent house salad, and some amazing peppercorn gravy.
Ribeye, bone in, or Porterhouse.
Philly style is good with a nice rub.  Otherwise Med-Rare and you only need a little salt and pepper.
Garlic mashed potatoes, sometimes cheesy.  Very customizable dish.
Seafood also makes a great side for a steak.  Oysters, crab, lobster, or clams.   A 'steak oscar' is crab meat and melted cheese on top of the steak.
Corn on the cob, grilled with chili and lime juice.
I'll pay good money for a good meal, but I find that when we all get together to have some home cooking, we have some amazing meals off the home grill.

Tonight's menu:

New York Strip, seasoned with sea salt and fresh ground black pepper, oven cooked at 275F for 20 mins, then pan seared in a cast iron skillet for 2 mins each side. Allowed to rest for 10 mins with butter melting over it. Cooked to medium, rather than medium rare, as my skillet was too hot.

Served with buttered asparagus and a cold Coors Light.

w/Mashed potatoes & steamed broccoli

Cooked on my grill or someone else's, as long as I get to eat it!

Grilled is ALWAYS good, but Emeril Lagasse has a recipe where you pan sear the filet for 4 minutes on each side, then smother it with a bleu cheese spread, then stuff it in the oven for 10-15 minutes.  Fantastic!

If it ain't mooing... ;) Blue rare sirloin if the meat is good, otherwise rare. I like pan fried since I almost always overcook on grills. Side dish = battered fries or wedges.
I like it basic, just salt and pepper rub as it sits out to room temp before cooking.

For the record, I like beef sashimi.

Obviously, but like I said "all other things being equal that's still incorrect" You don't make a steak rarer by increasing the heat, you do it by reducing the time (and potentially increasing the heat in addition).
