Went to LV and headed over to the buffet... Saw people with Prime Rib... Looked good so I went to go get some for myself... it was brown... like bark on a tree.

Like come on! It's Prime Rib FFS, who roasts a steak to bark and call it prime rib...

Porterhouse, medium rare. Grilled in the summer; Pan-fried in the winter. Seasoned with salt and pepper. My favorite side-dishes are veggies like mushrooms and onions.

I like cooking a lot so I prefer cooking it myself but there's definitely nothing wrong with a good steakhouse haha.

Pretty simple but I always think steaks are amazing on their own and should be kept as simple as possible.

Well then...I haven't tried everything up there. I really haven't had enough variety to determine what cut of steak or what sides I like. I like it Medium Rare off the grill preferably DIY.

I do pan-fried when I don't have a grill, but the grill is definitely the way to go.

For pan-fried, I tend to use the same dry rub, with macadamia oil in a cast iron pan. I've seen people recommend canola oil before, but macadamia oil tastes better, has a similarly high smoke point, and is actually healthier for you (canola oil always seemed to have too much flavor and would end up competing with the steak flavor).

Haha I just learned something here ... I live near Montreal and I had never heard of Montreal Steak Seasoning. So I googled it only to find that it's only some classic steak spices. No one specify it's from Montreal around here  ;D so I never heard of it before!

I don't know about the cheese and bacon, but yea, some nice burgers can be made - Charlotte and sun blanched tomato is nice!  Ohh and instead of cheese and bacon, try a poached duck egg.

Easiest way to do a poached egg is to boil up a small pan of salty water - I like a drop of rice wine vinegar in there too - stir it up to a gentle whirlpool and crack your egg into the centre.

Duck eggs have a slightly stronger and (to my tastes) nicer flavour than chicken eggs, and they're a little larger too which is always nice.

The salt just brings out the flavour a bit and (fractionally) raises the boiling point of water - not enough to matter, but it's a good excuse.  Boiling anything tends to take away from the flavour a bit - green tinted water after cooking broccoli?  There goes some flavour, the salt helps compensate for this loss, though it'll never replace the lost flavours...

I think it was ~17/lb, but they don't really sell it that way.  I wasn't really going to ask since an actual butcher around here is kind of a rarity.

I fried an egg in the remnants of the steak, and the entire plate afterwards just smelled like something you'd only catch walking into some kind of world-renowned steakhouse.  I'm not going to necessarily say it was worth every penny, unless you're habitually flush with cash, but it was definitely leaps and bounds beyond what I've picked up at any run-of-the-mill grocery store in recent memory.

While very fresh beef is good, many restaurants age their beef to allow the enzymes to break down the fibers of the meat. This gives it a much better flavor than you get with fresh beef.

P.S. If you're a vegetarian/vegan/animal rights activist who hates the thought of eating meat, why not make another thread called "How do you like your vegetables?" or whatever, and leave us carnivores to this steak thread??

animal rights activists are pretty funny since if you follow them around for even a few hours they almost invariably treat human beings worse than any other average person does

i also employ telepathic communication with most varieties of fruit & vegetable and would also like to tell you that they scream in agony every time they are eaten.  the only solution for total empathy is to starve to death.

I've never eaten a steak before, I guess this is an american thing.

I live in Hungary btw, I prefer chicken/turkey breasts to everything.   ;D
