(...)Whereas back then I wrote about the tyranny of the majority, today I'd combine that with the tyranny of the minorities. These days, you have to be careful of both. They both want to control you. The first group, by making you do the same thing over and over again. The second group is indicated by the letters I get from the Vassar girls who want me to put more women's lib in The Martian Chronicles, or from blacks who want more black people in Dandelion Wine.
I say to both bunches, Whether you're a majority or minority, bug off! To hell with anybody who wants to tell me what to write. Their society breaks down into subsections of minorities who then, in effect, burn books by banning them. All this political correctness that's rampant on campuses is b.s.

Oh iri, there is only ever one glass in the pictures.
"Because keyboards are accessories to PC makers, they focus on minimizing the manufacturing costs. But that’s incorrect. It’s in HHKB’s slogan, but when America’s cowboys were in the middle of a trip and their horse died, they would leave the horse there. But even if they were in the middle of a desert, they would take their saddle with them. The horse was a consumable good, but the saddle was an interface that their bodies had gotten used to. In the same vein, PCs are consumable goods, while keyboards are important interfaces." - Eiiti Wada

Please make sure you ALL consume large quantities of this mythical substance called Fairlife Chocolate 2% Milk. I think it's lactose free as well. Easily the best thing I've had in quite some time (well, except maybe Steak and Shake).

(via twitter).

It also pairs well with bacon, so no further questions asked please  :D

I originally wrote this as 2% chocolate milk. Which makes sense, the other 98% is pure amazing.

110555-0

Grilled some catfish for labor day, also had some calamari and mussels.

110557-1

This was my firs time using the new electric grill, it works excellent for vegetables and simple things like hot dogs.

110559-2

Had some excellent freshly butchered pork chops.

110561-3

I've also been on a sauteed mushroom adventure lately.

110563-4

We had homemade tomato soup with BCT's, the lettuce was bad so we just used cheese instead.

110565-5

We've had ham steaks from a pig we had butchered for a while and I never thought to grill them until the other day, the ham came out excellent.

110567-6

This was one of those quick, cheap, throw together meals, I told my wife it reminded me of a Cesar commercial.

110569-7

and my favorite for last, grilled cabbage

It's pretty much just charred meat.  Eating that puts the same chemical into your body that smoking tobacco does, and it can "cause cancer" in the right conditions.  (used quotes to not seem so tinfoil-hat-y, it's still very low risk)

I have started making kimchi, we are on our 3rd batch now. One major driver was for my teenage son, who does not eat many vegetables, but he likes this and I enlist his help making it so that he has a real (literal) feel for it. Since he does not like spicy food, we leave out the red pepper altogether and you can actually see and identify the vegetables in it. We also use multiple vegetables, including some Western ones, so it is far from authentic.

I love kim chi (and sauerkraut) but had to give it up because of too much sodium.   The Korean H-Mart near me has around a dozen or so different kinds and I couldn't find any without MSG or at low levels.

Sauerkraut is great on Reuben sandwiches but I am mostly indifferent to it otherwise.

When you make stuff yourself, you can put in, or leave out, whatever ingredients you wish.

If it wasn't for all the sodium, I could just sit a jar of the stuff everyday.

What is truly awesome is the book "Wild Fermentation" by Sandor Ellix Katz.

Regarding fermentation - how low can you go with the sodium?  For example for the Kimchi you made can you get it down to 500mg for the entire jar?

500 mg is an extremely small amount.

That is a very large jar and probably represents about 20 moderate-sized servings.

That is a big jar. It holds 3 of the cylindrical pint jars that they sell for about $5 at the Korean market.

If a pint and a half is a single serving, your problem is not sodium.

We eat a couple of ounces as a small side dish to the main meal. The health benefits come from eating small amounts regularly, not bingeing.

Yeah, I forgot. Actually I am from the South I like "sour slaw" on my barbeque sandwiches, too, which is kind of like raw sauerkraut. (I hate "sweet" slaw!)

It works as a sandwich condiment, but I don't like it much by itself.

Ok ok ... maybe 4 servings in that jar.   I usually don't eat it as a side dish; I like it as a meal by itself.

I recently started taking some photos with my real camera instead of the phone...

Before & after - Gnocchi with corn off the cob, thyme and crimini mushrooms -

Before & after - Oyster mushroom and fontina grilled cheese with roasted cauliflower, sweet peppers and pickled red onions -

Also green coconut curry and summer ramen!

I have an Instagram if anyone wants to see more.
