The canned type has an extra --metallic-- smell + Alkaline water smell ..
But overall it's pretty close to fresh..
Fresh is like 20x the cost of canned.. hahahaha...
If you've never had them before, you might not be used to the smell..
What you might look for instead is OILED bamboo shoots in the Glass jars.
It's in chili oil, so you can just directly stir fry that , it's already oily..
But again, it WILL smell like bamboo shoots..
I'd say overall, you get used to it..
