The quality and selection at the new Whole Foods that just opened down the street makes me happy. I feel like a shill saying so, but the level of ingredients you can get there are so far above anything Safeway has to offer it's not even a fair comparison.
In another life I was a sous chef, and my head chef's philosophy at the time was always top-quality ingredients prepared masterfully but simply, which became my favorite way to cook as well. Later I found when you go with lesser ingredients it becomes more of a dance between balancing and layering other flavors to attempt to create something more complex or interesting, which inevitably covers up the main ingredient featured in the dish. But when preparing a meal with good fresh ingredients the goal is to attempt to preserve, and if possible even enhance that aspect of the dish.
