My wife is a Mexican, I eat Mexican food at least once a week, and I live in Texas just outside a city that is predominantly Mexican. Mexican food is my favorite. Chipotle is good, but definitely not true Mexican food.

I'm a skinny bastid that tends to get so engrossed in things that I forget to eat. I've always had a high metabolism too. Fun, fun!

I love snacking on almond butter sandwiches though. Red beans and rice is something I could eat until the end of time. Sushi is my guilty pleasure. I love spaghetti like I'm an Italian Plumber. Combination fried rice will give me a heart attack in the best of ways. 

Once you understand the way of the beignet, you will understand the meaning of true love by way of consumption.

Yeah there's a sweet legit Mexican place in downtown near where I work.  Son of Mexican immigrants opened the place up.   

But I still don't get why Chipotle and other Mexican places are looked down upon.  Yeah, it might not be as greasy as real Mexican, and it doesn't give you the ****s like real Mexican, but is that really so bad?

It's like when someone asks me if I know how to make General Tso's chicken. I've had it once in my life in college. **** was terrible. It's Americanized food and while delicious, isn't authentic. And it kinda sucks seeing your heritage boiled down to something to suit someone else's palate....and then people telling you that they know about your culture's food.

Don't get me wrong though, Chipotle and lo mein are good in their own way. Just not the same as like homemade tamales or dumplings that your mom made with a recipe from the old country.

I found it not that hard though, after sitting in the pan poaching for like 90 minutes the skin is really easy to peel off, the thing is you have to peel it while the tongues still hot, if it cool down then, yeah, it'll be pain

yeah I usually do the same too since it's a quick and common way of asian cooking, but this time I want something that I can eat as brunch and be ready when I wake up so that I will only have to reheat it, then stew is my choice
