Depending on what kinda potates they are (this works well with yellow or white potatoes) you could also par-boil and then smash with the bottom of a glass into a broken disk sorta shape, brush with oil, season with garlic powder, parsley, and a little cayenne pepper & salt, pop them in the oven 400 F for 20-25 min ... that's a damn good meal if you ask me
