Overall.. I prefer medium grain... it's just a good amylose:amylopectin balance..  hydration wise, I've gone down to 53%..  I used to eat 58%,  but I find that for medium grain, Lower water percentage produces a better mouth feel.  It's kind of like al-dente..

What you do is get the FRESH HOT chicken, it has to be HOT..

Then when you go to Put it in the Iceream, it gets in there because of the heat.  but then a balance is struck upon contact such that the meat is still hot on the inside, while the outside has some cold contrast icecream..

It's delicious..

I first started doing this because the popeyes I go to has a dairyqueen right next to it.

holy **** that down speed.... My girlfriend and I were about to move out to an area that was a little ways outside of city proper and we didn't even consider whether or not cable internet would be available. 5MBPS would kill me. That's seriously like 3g speeds.
