Meats is the tough one, it's a very endearing part to the American way of life.. even though so much new evidence show that it IS the cause of significant western cancers and the PRIMARY cause of heartdisease (WHICH) kills most Americans today..But removing it is almost the same as being --Un-American-- so, that just won't happen for the general public any time soon. It took almost 70 years to get our children off smoking.. it's going to take probably longer for meats.

if you are really paranoid, you can use pickling jars...but that increases cooking time by a lot.
