Ingredients

-do not mix ingredients together in the beginning, they have to come together in the proper procedure.

Sticky Rice (sweet rice) recommended, works with all rice.

Tools: Infrared Thermometer (highly recommended), Thic bottom cookware, spoon.

Unit: Tablespoons

6 veggie oil
4 Brown Sugar
3 Dark Soysauce
3 Light Soysauce
2 White Vinegar
2 Water (very end)
1/4 (0.25) Salt

5 (cloves) Garlic
3 (pods) Star Anaise
4 (pods) Clove (not garlic)
0.7x0.7 (inch cube) of Ginger
1x1 (inch) Cinnamon bark, use less if powdered.

Procedure:

_ Bring Oil + Brown Sugar to 310 F (154 C), wait for it to m0ar-brown (caramelize) and clump, 2-3 minutes, stir.
____Do not exceed 330F, or it will start turning black+bitter. Tp4 rec 320 max.
____Use infrared Thermometer.

+ Garlic, let bubble for ~1 minute. watch the temp, <330F always.

+ Dark, Light Soy, Vinegar, Salt, Star Anaise, Clove, Cinnamon bark, Ginger, Water

_ Bring to low-Boil for 4-5 minutes, turn off heat, let rest for 10 minutes.

_ Stir and spoon from beneath when loading up the rice.


Only need 2-3 spoonfuls per bowl of rice, this really puts away rice,  eat lbs and lbs o'rice.

Yum....side of pork belly would go nice.

Tp4 misses pork belly.  Sigh.. This sauce works just as well on a beyond sausage or pattie though.. reduce the oil since it's not necessary.
