depends on which part of asia you're in. where are you now btw?
I don't live in asia, but for me, all street food is unhealthy. Many vendors try to cut cost by using sketch ingredients. Most of the food that I ate from stalls were either sugary or fat/fried. My cousin used to eat street food in China almost every night...high cholesterol in his low 30's. Night markets are fun as a tourist though.
I live in Asia and I don't go for street food vendor because as you pointed out, they are fried and js unhealthy especially some reuse the cooking oil.
The thing that came to mind is Congee (rice porridge) maybe with some vegetables/fish added - but have yet to see anyone selling that.
