Do you guys drink milk tea?
« on: Sat, 06 June 2015, 11:52:57 »
I drink it every morning.. and afternoons..

It's keeping me fat I think.. cuz i sweeten it with honey..

Tp4 makes milk tea with "red tea" (known as oolong/black in the west)

Traditionally, You'd use "aged black tea" (known as pu-erh in the west)

Pu-erh would taste the closest to the HongKong origin of the popular Milk-Teas.

_____ the controversy here is that Traditional Pu-erh is aged for a LONG time (YEARS), it's unlikely that this would be the "center" of creation during the popularization of Milk-Teas.
_____ the Boom must've occurred AFTER they began using the -accelerated fermentation process- 渥堆  which produced the Pu-erh within months as opposed to years.
_____  Regardless,  the flavor would be similar

_____  But the sn0b-types would argue Traditional Pu-erh is the only Pu-erh

You want to try 2 things..

There's the Obviously-Sweet, iteration

AND

There's the Minimal-Threshold-Sweet.

.........  This is done by sweetening to the minimum detectable threshold, such that the sweetness does not overcome the other flavors...

........ Similar to making sushi-rice.. they add as much sugar as possible without the rice tasting obviously sweet..

Also...

In HongKong they pour the milk tea through a sieve/filtering material..

I believe the fundamental reason for this is that it returns oxygen to the boiled liquid.. thus removing the potential "flat" taste of the water.

I just shake the tea in my thermos before I drink it..  because I don't want to clean a damn sieve.

It's quite specific.. LOL..

There are many variations..

You start with Black Tea..   but... the steep length is generally much longer and in high concentration.

Because you're going to be mixing alot of milk into it.

In the ol' days they used more condensed milk / evaporated milk because fresh milk wasn't available.   -So, technically-  traditional Milk-tea aught to be done that way.. because the flavor will obviously be different than using normal milk.

Also,  it doesn't work with skim milk, or 2%, so don't even try..   It must be whole milk.. or condensed, or a fattie-dairy-creamer..

I have my coffee and tea black.  Mostly coffee, but sometimes tea.  With 2 sugars.

Wait so did we establish whether milk tea is just tea with milk in it or some form of special tea concoction dreamed up in the skunk works that is TPs organic super computer?

If so black tea is best tea but milk coffee is best coffee.

I feel like the only snooty tea drinkers are those who drink green tea and go on about how great it is and how healthy etc and then go on and on about all these strange horrible imported teas that needs special equipment just to brew... Like for real, the only piece of equipment you need to make tea, is a kettle

I don't willingly consume sugar, I avoid products with added sugar. I do eat fruit. But I don't consume dairy products either. And although I like tea, that type of caffeine makes my mouth extremely dry. So, only coffee, freshly grinded, locally roasted, single serve brews with an Aeropress. Coffee, my love.

Bubble tea is very sweet,  the cold ones mask it by being cold..  But you're getting a super-sugar rush from it..

I think Tp is talking about Hong Kong style bubble tea like the ones you see around the world today. Minus bubbles of course.

Incidentally, I will be drinking a lot of bubble tea this summer in Taiwan! :D

If you get the bubble Tea on the road,  it's gonna make you so fat..  prolly close to soda.
