Eggs should not have leaves sticking out of them
I had never made egg salad until I was well into middle age, but eventually I had an herb garden and kept looking for things to do with them.
Egg salad with lots of fresh herbs can be quite wonderful. Looks like you are using thyme. Thyme, parsley, basil, oregano, and chives all play well together. Rosemary is excellent too, but needs to be used in moderation and without a lot of distractions.
Minimal mustard, but fresh ground pepper is essential. Try chopped green olives.
I agree with fohat on this one. I use a lot of different seasonings in about everything. Also, for pretty much any sandwich spread type salad, if you measure anything, you are doing it wrong. The best part about just reaching into the fridge, cupboard, pantry and dumping in, it comes out a little different each time.
Can also try experimenting with other liquids for a splash of different, such as A-1, worchesterchire (I know that is spelled wrong), vanilla extract, tobacco sauce, etc.
