The reason you don't want stainless steel, is because the surface finish is more porous than ceramic coating. Old rice seeps into it
For home use, the ceramic coating is better, because the pot is relatively small, and you can treat it gently, manipulable in the hand.
Whereas in industrial models, they may just use SS, because it's so large, that you can't wield it carefully enough such to avoid dropping / cracking / denting. along with use in industrial environments which is rougher..
Anything above $300 , has a pretty good coating..
And the pots are not expensive to replace as long as it's not a Japan specific model.
THAT SAID... I don't think $300 weeaboo cookers are warranted... because the newest chinese versions have copied all their tricks.. @ 1/3th of the price.
