I've tried going Vegan multiple times and failed.
I feel one of the major issues is Tofu in the midwest SUCKS. The Artisan Tofu here can't even touch store bought brands on the West Coast.

In traditional chinese cooking.. TYPICALLY, outside of specialty tofu, It's always been used as something of substance you could eat, which Soaks-Up the flavor of the OTHER things you cook it with.
Tofu itself is rarely the main flavor of any dish.. because its flavor and scent are both very mild
Yes but the Tofu I had one time at a place in San Francisco was so good I nearly came on myself.
And THAT was for the bog standard grocery store carton variety.
Imagine a 300 lbs dude, sweaty after a 5 hour flight staring deeply into his own eyes via the bathroom mirror, cracking open a carton of Tofu and after the first bite having the "O" face.
They may import Soy Beans from the Mid West but they sure know what to do with them.
