Tp4's Noodle Slick
« on: Fri, 30 October 2020, 18:59:33 »
Dis' for dat fast hunger, wurks great w/ all noodlez,  also ramen if y'all wanna skip the preservative laden flavor packets.

Per 100g (dry weight) noodlez <any type>

After boiling +draining, apply Noodle Slick.  Noodle Slick is not for soup noodles.

3/4 Tbsp cooked oil.

< Mix oil into the noodle first, BEFORE below ingredients >
< This is to keep the flavoring buffered on the outer shell of the noodle, increasing the impact. >

vv < mix the following ingredients together seperately and microwave for 20 seconds, before application to oiled-noodlez >

3/4 Tbsp a SoySauce
3/4 Tbsp Balsamic Vinegar, If using white vinegar, 1/3 Tbsp
1/2 Tbsp Honey (or white sugar)
1 Teaspoon Salt

this is very close to what I use for sautéing Asian veggies. Equal parts soy sauce + pomegranate or cherry juice, salt+pepper to taste, chili flakes, tsp of miso honey or maple syrup

Confirmed very good on noods as well

Yea, lots of things can go on it,  Tryn' to keep to the baseline, because thick flavors like pepper/chili/spring onion/miso are polarizing

The vinegar can be substituted with 2 Tablespoons of Red-Wine as well.  Too much wine though makes everything bitter. avoid.

Oil before flavoring is important for noodles, otherwise the noodle will soak up all the slick internally, and it dampens the taste.

I'm going to make some rice noodles with carrots, parsley root and soy sauce.
Would you suggest using some maple syrup too?

Or any juice works in a pinch too. Secret from working in a hotel kitchen, sometimes we'd use OJ or cherry juice to sweeten something. Even Sprite/7-Up.
