Problem is the raw onion,   it's just tooooo onion-y ?

A quick spin through the microwave, say about 30 seconds as a start, goes a long way towards taming the harshness of raw onion.

You can go much longer and eventually even brown onion in the microwave if you need to.

specific concern is the stinging raw onion-i-ness thats a bit overpowering

I use yellow onions for almost everything, and sweet onions (subset of yellow) when they are available and reasonably priced.

If red is too strong, use yellow sweet like Vidalia or Walla Walla. The best for caramelizing.

Red onion are my fav for raw BUT they can sometimes be too hot. My current batch is mild and so good!
