Curry 2
« on: Wed, 02 September 2026, 19:14:21 »
Didn't have ne potato for thickener.

Something else that worked great,  OATMEAL.

It's mostly earthy and mild in flavor, fits in perfectly, and it thickens great without burning very easily like potato because it doesn't sink to the bottom so quickly.

Fantastic.

Tp4's going to use oatmeal from now on.

Now just waiting for coriander powder, some cardamom, and mace.

Kinda expensive assembling all this stuff..

But you'll have so much more curry powder making it yourself, and you can adjust it to your liking. Don't forget to lightly toast some of the whole ingredients before grinding, it adds a lot more depth.

Another great thickener discovered 2day by the P4.

Just add top-ramen to it.  Budget + Dilcious.

Interesting fenomenon, you be kookn' curry outside, and not nearly as many mosquitos.

Tp4 suspects the strong spices smell cloaks the hughmhnn smell.

That is an actual true thing, especially if you add a bit of lemongrass. It's the natural oils from the plants used to make curry that mozzys hate.
Indian people have been scientifically shown to attract less mozzys.

After several tests,  it really seems like oatmeal is the best thickener.

Because if you use any other starch,  corn/potato/yam,  after 1 or 2 days in the fridge, the starch bonds are quite loose, and the curry becomes watery, even if you added lots of starch to it initially.

WHEREAS,  with the oatmeal, it seems after a whole week,  the bottom of the bowl is still gooey and very cling-on for the rice.  And it retains that mrrrphhrrhrhrr feel in the mouth.

9 day test.

With oatmeal,  the curry is still gooey.   NO WAY any other type of thickener can do this. They would've gone watery by now or congealed to the point of being putty like..

The question now is,  if man eats curry, every day, for 30 days,  will he die.

In the same gravity as neil armstrong,  TP4 will brave this expansive unknown, for science, love and world peace.

Day 15 updat:

The western world is falling apart.  But Tp4 persists, under great poverty.

Curry still gud,  Tp4 physically feel energized.  Mentally the curry is soothing,  AS YOU KNOW, Spices are psychotropic and strongly antioxidative.

Technicals:

A good way to oil toast the spices with 0-risk of burning them is to add lots of sugar with the spices. 8 tablespoons.

The sugar forms a protective shell around the spices while remaining very hot in the oil,  ONTOP of being a direct indicator for temperature, if it's too hot, the sugar will blacken instead of remaining more/less amber.

When the sugar congeals with the spices,  it essentially picks it up from the base and become little blocks, so when you put in other ingredients to fry, like onion pepper, then cook, the spices do not immediately release,  After the fry part,  the blocks dissolve when you add the chopped tomato base, as the tomato release enough water for the soup cook.
