The "Ask a professional mexican" thread
« on: Thu, 02 January 2014, 12:41:25 »
I really don't want to do this, but **** it, It'll be informative and useful for you guys. I was kinda weighing whether or not I wanted to do it, and figure nothing too terrible could happen.

I've been a professional for 3 or more years (25 years an amature before turning pro). Blah blah blah. Don't know me. Blah blah blah have other pro friends. Blah blah blah retired to become Viet.

I will try my best to answer your questions. My answers are based off my experience, which is not "textbook".

Ask away.
No, he’s not around. How that sound to ya? Jot it down.

Hum, so that's why there was an "habanero salsa/chily bar" at the hotel when I went there. Yea, eating a raw habanero salsa the way we eat a salad before the real meal was such not a good idea (I didn't get past the first bite). Them 30 min after were not the best of my life. The only good part is that I managed to put some in one of my friends meal without him noticing it.

Best? Not sure. But for margaritas might as well get the cheapest since you're masking the taste with the mix.

Habanero.

The chilis that are more common for daily salsas are xalapeño and serrano. Ocasionally chipotle. Habanero goes with certain dishes like Cochinita Pibil and others that are originally from Yucatán, that are not that frequent in daily dishes around the country.

I think checking an entire chain off your list due to one incidence of food poisoning is pretty ridiculous. Any number of circumstances could have played into that, many of which were most likely to be related to that particular location as opposed to the entire chain.

Not that I care what you eat or not.

Both ways are equally common. i.e. The city of Xalapa, capital of the state of Veracruz is offcially written as that, and can be also written as Jalapa, but it is less common. This city is where the chiles were named after, even now, there is a company that canned xalapeños filled with mead.
