Anyone's made coconut rice?

So..... there doesn't seem to be a  consensus "online" on the water to coconut milk ratio..

Can I just be lazy, and use all coconut milk  ?

Would that be too greasy ?

I love coconut rice. It's called nasi lemak in Malaysia, a very popular local cuisine. Yummy!
I have no idea how to make it though :P

I just watched a bunch of thai videos on youtube.. 

Seems like there's two variation..

You can basically stirfry rice with coconut oil/ coconut shavings..

OR you can use coconut milk and cook it -into- the rice


side note:

Thai sounds like cantonese, but as if the guy/girl is holding their nose while speaking..

Sure I make occasionally coconut/garlic/thai basil jasmine rice to go along with some main dishes. For me, I don't like too much super strong coconut flavor so it depend on how watery is the coconut milk you will be using. If it's very thick you will surely want to 50/50 it at best with water, if it's already a pretty watery one then maybe something like 75/25 water. I cook the rice in it, not add afterward.

I stayed a good 3 years in Medan, Indonesia, and being a vegetarian, there were limited things I could try from the local cuisine, nasi gurih was one of those things that I could and I really liked as well.

I stayed a good 3 years in Medan, Indonesia, and being a vegetarian, there were limited things I could try from the local cuisine, nasi gurih was one of those things that I could and I really liked as well.

Hah, I thought the folks in Medan would be vegetarian by budget too!

Side note: the vast majority of Indonesian dishes are veggie because the population is poor. I actually find it hard to get decent meat dishes - eg their chicken is always tough and stringy because even their chickens run around all day pecking at insects rather than eat fattening grain on some scientific diet.
Most of the modding can be done on your own once you break through the psychological barriers.

I don't think a lot of the delicacies were vegetarian, but yes I they had a lo t if traditional sweets, and me being a sweets loving person, thoroughly enjoyed myself.

TO OP : I usually use 3/4 a can for my curry dishes, or 1/2, then use the remaining mix with water for the coconut rice.
1 tip for fragrant coconut rice, cut and bruise a few pieces of ginger and add them in :) Really good !

All coconut milk is not a good idea, as you can already tell. You'd need about 10 tablespoons of coconut milk to 2 cups of rice and 2.5 cups of water.
To make it more fragrant, don't forget to add screwpine/pandan leaves if you can get some.
